The Ultimate Veggie LasagnaÂ
My family simply loves pasta, I simply love vegetables. This has created many a night where they beg for the usual and I’m craving for something different.
So a few weeks ago I found myself in this predicament once again. Instead of just giving in to their pasta cravings, I decided to add a little twist. A twist that left them begging for more – can you believe it?
It’s simple really.
Usually your lasagna filling is either ground beef, tomatoes and a white sauce, but I decided to do something completely different. I used a combination of broccoli, mozzarella cheese and some herbs and spices to create the decadent filling they’re still raving about.
What you’ll need:
2 cups of finely diced broccoli (I used my food processor to zap the broccoli into a crumbly texture)
3 cups of grated mozzarella
Spinach lasagna sheets
White sauce
1 cup of grated cheddar cheese
Method:Â
- Mix the broccoli and 2 cups of Mozzarella and add some herbs and spices of your choice. I used salt, pepper, Italian herbs, and garlic.
- Create a white sauce that is creamy, white, and garlicky. If you’re not sure how to do this, you can find my favorite one here.
- The layering! Spread the sauce over the bottom of your baking dish. Place down enough lasagna sheets to cover to base (no I don’t precook them). Now spread a generous amount of your broccoli & cheese filling. Drizzle some more sauce over the broccoli and cheese before starting with your next layer of lasagna. Repeat until you reach the top of your dish. My dish takes three layers.
- When you’re done sprinkle the rest of your mozzarella and your cheddar over the top before sliding into the oven.
- Bake for one hour at 180 C / 350 F
- Allow to rest for 15 minutes before serving. I served a garden salad on the side.
