Grilled Coriander & Paprika Kingklip
We just spent a few days at the beach. Since I come from Cape Town, I’m a fish lover! Whenever we go to the beach, we make a plan to get some fresh fish from the harbor.
On our second morning at the beach, we headed to the harbor and got some beautiful Kingklip fillets.
So, if you’re a lover of fish like I am, the ultimate challenge is to grill fish that it’s got that beautiful taste without drying it out. My husband and I tried this on holiday and although I’m sure you can try it with any white fish, I definitely recommend trying it with Kingklip.
You’ll Need:
4 Good sized Kingklip Fillets
Juice of half a lemon
2 teaspoons of minced garlic
2 tablespoons of finely chopped fresh coriander
About 2 teaspoons of virgin olive oil
Enough Smoked Paprika (finely ground) to sprinkle evenly.
Combine garlic, coriander, virgin olive oil and smoked paprika to make a nice marinade. Season your fish with salt and pepper. Marinate the top of your fillets with the marinade. Leave in fridge for two hours.
On a hot grill, put the fish skin side down and grill for five minutes. Turn over for another to and let it rest for two minutes. We let it steam beside the grill while it rested. Before serving squeeze lemon juice over.
Interesting fact: cooking fish with fresh lemon juice makes it tough, that’s why you add it right at the end.
