Yummy Brown Pudding

There’s nothing better than a warm brown sugary sweet pudding when the weather begins to turn colder.

This is a crowd-pleaser, a rib-sticker, and the perfect ending to any meal. I’ve had this recipe for years and managed to beg it off one of my family members. I hope you enjoy it as much as we do.

Ingredients:

2 cups flour

¾ sugar

2 cups milk

3 tablespoons vinegar

2 tablespoons apricot jam

2 teaspoons baking powder

2 teaspoons baking soda

 ½ teaspoon cream of tartar

2 eggs

Pinch of salt.

Method:

Blend eggs and sugar. Add flour and baking powder to egg mixture. Lastly add apricot jam, baking soda, cream of tartar, vinegar and milk. Stir well.

Bake at 180 degrees Celcius covered with foil for one hour.

Whilst baking prepare sauce.

Combine 1 and half cup of sugar, 2 cups of water, 1 cup of mmilk, 250g butter and 2 teaspoons of vanilla essence in a large saucepan. Bring to simmer for 5 minutes. Pour over pudding once baked.

Serve with custard, ice-cream or cream.
